You can't remove any sub-fields from the address field, except for the second "street address" line. You can't directly change the titles under the address fields, but if what you want to do is change them to another language, this can be done by changing the form properties. Click on the "Form Properties" tab and them on the "show more options" link. In the new section of the interface that shows up, choose the language you want form the "Language" drop-down menu.
