   Is it possible to
   1: Add a new field to the address block. I would like to add county as a text field to the address block

   2: Remove the country drop-down list altogether. I would rather not have the country drop down list.

   Adding a new field would be quite difficult. However, you can change the existing field.
   You can change the State field into County.

   While removing the country dropdown is very easy.
   Let me know what you think?

   Actually I need the state drop down and was successful in changing it to a dropdown. Now I just need to add the county and remove the country. I think I can figure out how to remove the country but adding the county seems more difficult

   I think you can simply change the country dropdown into a textfield and then change the label to county.
