Need to send notification to email admin only field

I am trying to send a notification to an admin field, but in both the notifications area and the logic area to send notifications, that particular email field isn't listed as an option to send to. How do I send to an email field that is admin only?

For reasons I don't understand, admin fields do not seem to work for many things you can use non-admin fields for. You should be able to use the email field if you make the field hidden rather than admin, however. Would that be acceptable?
